Creamy mushroom and spinach stroganoff with quorn pieces served with basmati rice. I've made this dish before but never thought about using spinach. I wanted to add some colour to it and I can say that it complements it perfectly and would definitely recommend it.
Ingredients:
-mushrooms
-spinach
-quorn pieces
-butter
-dry basil
-coconut milk or single cream
-salt/pepper
-garlic powder
-basmati rice


This is a really simple and quick recipe to put together.  Start by melting some butter in a frying pan and then add the quorn pieces. Cook them on low heat for about 10mins if they are frozen, before adding the mushrooms. Next add some single cream or you can also use coconut milk, the mushrooms and lastly your spinach. I boiled the spinach for 3-4mins before adding it into the creamy sauce. Season your stroganoff with as much or little salt and pepper as you wish and continue cooking on low heat until your cream has thickened.
Serve it with some rice and garnish it with some chilli flakes and fresh parsley.
