The origin of a Niçoise salad is french and more specifically it comes from the city of Nice. Traditionally it's made with hard-boiled eggs, new potatoes, tomatoes, olives, anchovies or tuna and a lemon and oil dressing. I've added a few more of my favourite vegetables to give the salad a bit more variety and colour.
Ingredients:
-new potatoes
-eggs
-tomatoes
-green beans
-cucumber
-courgette
-olives
-tuna
-pickled red cabbage
-cannellini beans
There are not many instructions I can give for this recipe. Salads are a great way to play around with different flavours and dressings (dressing is always important) and so just be creative and make a nutritious bowl of goodness. 
Boil the eggs, potatoes and green beans, sauté the cannellini beans with some olive oil, grill strips of courgette and chop up the tomatoes and cucumber. As for the pickled red cabbage, I made it a week ago and kept it in the fridge until now. I simply boiled some white wine vinegar, water and a bit of sugar in a pan and reduced it to half of the original quantity. Chopped the cabbage in thin strips and filled a jar with it and the vinegary liquid.
To finish off your salad, drizzle some olive oil, squeeze a bit of lemon juice alongside some salt and pepper and a little bit of chopped parsley.
