Really happy with this dish. The only thing missing was a glass of red wine haha!! The only time I've ever had radishes was in a salad but I have never used them or cooked with them myself. I wanted to try something different and play around with some subtle flavours and I can say it worked quite well.
Ingredients:
-quorn sausages
-tinned chopped tomatoes
-tomato paste
-vegetable stock
-salt/pepper
-onion
-cumin
-sugar
-olive oil
-fresh basil
-garlic powder
-bay leaves
serve with:
-potatoes
-peas
-radishes
For the sausage casserole you can start by shallow frying some chopped onion before adding the tin of chopped tomatoes. Then you can just add the rest of the ingredients (tomato paste, salt/pepper, vegetable stock, cumin, a tiny bit of sugar and garlic powder, fresh basil and bay leaves) and cook on low heat by adding a splash of water every time it needs it.
Before adding your sausages in your tomato sauce I would recommend you slightly shallow fry them in a pan for a nice brown colour but you can totally skip this part if you wish. Then you can simply pop them in your casserole and keep cooking for about 20-25mins on low heat.
I decided to serve the sausages with some fried potatoes (I know it's a bit naughty but it was quicker than cooking them in the oven) additionally I had some peas and lastly some grilled radish slices.
