Some of my most favourite ingredients, all stuffed in a very thin, delicate, light and vibrant (french) spinach crêpe.

I have been working many hours the last couple of months and I have not had as much time to create new recipes and post about them but something very exciting will be happening very very soon and I can't wait to be able to share it on here. I am hoping that this will enable me to make more recipes and share them. For now though, here is the recipe for these beautiful and colourful crêpes.
Ingredients:

for the Crêpes:
-120g all purpose flour
-2 eggs (beaten)
-60g butter (melted)
-450ml (oat) milk
-2 handfuls of spinach leaves
-salt/pepper

for the fillings and garnish:
-hummus
-red pepper
-avocado
-feta
-parsley
-chilli flakes
You can ultimately add anything you want in the crêpes but I found that the combination of these ingredients worked perfectly.
To make the batter for the crêpes simply add the flour, salt, pepper, in a bowl and mix in the 2 beaten eggs and the melted butter. Add the spinach leaves and milk in a food processor or smoothie maker and then pour the green (oat) milk in your mixture and mix it all together. 
Cook your crepes, preferably in a non-stick pan otherwise you might struggle getting them out without splitting them. Then it's up to you to fill your crêpes with whatever you fancy. Keep it light and healthy ;)
