I've been meaning to try enoki mushrooms for quite some time now, not only because I love mushrooms in general but because they also look way too cute and deserve a little love too. I checked online and one of the most common ways to use them is in a ramen, so here is a simple vegetarian ramen recipe.
Ingredients:
-dry egg noodles
-broccoli
-baby corn
-mange-tout
-spring onion
-enoki mushrooms
-1 egg
-soy sauce
-sesame oil
-vegetable stock
-cumin
-paprika
-salt/pepper
-turmeric 


If you've got some vegetable broth stored in the fridge or the freezer then feel free to use that as the base of your ramen but an easy way to make a quick broth is by mixing a bunch of the spices you've got in your cupboard (not my idea) such as cumin, paprika, turmeric, mixed spices, hot chilli or any other spice you would like, in a pot with hot water. Add a vegetable stock too for extra flavour and then cook the noodles and vegetables in the broth for 4-5 minutes depending on how crunchy or soft you want the vegetable to be.
As for the enoki mushrooms, I simply cooked them in a different pan with some soy sauce for 1-2 minutes whilst waiting for the egg to boil.
Before plating it up, drizzle some sesame oil and soy sauce at the bottom of your dish/bowl, add the ramen and then place the mushrooms and the egg on top or on the side. Finish off with some fresh spring onion, black pepper and sesame seeds.
