A couple of weeks ago I was offered the role of the Lead Creative Chef for a vegetarian and vegan cafe in Brighton. Earlier this week the adventure began and I am so excited, thankful and eager to work. I will be revealing more about the role and the beautiful cafe soon…but for now, let’s just enjoy a cake!!
Ingredients:
-1 courgette
-zest and juice of 1 lemon
-125g self-raising flour
-100g caster sugar
-125g butter
-1 tsp baking soda
-1 tsp vanilla
-2 eggs
-2 1/2 tbsp oat milk
